Holiday Kale Salad


If you're looking for a healthy and easy salad for the holidays or just for a winter family dinner, look no further than this kale salad. The honey-lemon dressing gives it a light, fresh taste, and the dark-green kale and red cranberries look beautiful on the table!

1 bunch kale, stalks removed, leaves thinly sliced
2 tablespoons lemon juice, divided
¼ cup olive oil, plus extra for drizzling
Dash of kosher salt
2 teaspoons honey
Pepper to taste
1 medium Granny Smith apple, cored and chopped
¼ cup dried cranberries

In a large bowl, add the kale, 1 Tbsp lemon juice, a drizzle of olive oil and a dash of salt. Massage until the kale starts to soften and wilt, 2-3 minutes.  Set aside while you make the dressing.

In a small bowl, whisk remaining lemon juice, honey and ground pepper. Gradually pour in the ¼ cup of olive oil while whisking.

Pour the dressing over the kale and add the fruit.  Toss and serve.
